Eneko Atxa is the man behind Azurmendi in Bilbao, the three Michelin-starred restaurant voted no. 16 in the World’s 50 Best Restaurants. Born and bred in the Basque region of Spain, Eneko is immensely proud of his local cuisine. His London debut, Eneko at One Aldwych offers a simpler more relaxed menu which is deeply rooted in traditional Basque cooking.

Having worked closely with Eneko Atxa since 2006, Edurne has been integral in creating the menu and assembling the team for Eneko at One Aldwych. Now, in charge of the London kitchen she is excited to bring the Basque food which she loves to a new audience.

This talented chef has worked in the pastry kitchen at Azurmendi since 2014 and now at Eneko at One Aldwych she can be found creating the decadent desserts and ice creams for the restaurant’s sweet trolley.
