The dynamic young chefs bring an understanding of Basque flavours and traditions alongside a deep respect for the exceptional quality of Spanish ingredients.


Eneko Atxa

Eneko Atxa is the man behind Azurmendi in Bilbao, the three Michelin-starred restaurant voted no. 16 in the World’s 50 Best Restaurants. Born and bred in the Basque region of Spain, Eneko is immensely proud of his local cuisine. His London debut, Eneko at One Aldwych offers a simpler more relaxed menu which is deeply rooted in traditional Basque cooking.

Javi Blanco: Head Chef

Javi opened Eneko London with Eneko Atxa in September 2016 and became Head Chef in July 2017. He’s thrilled to develop menus with chef Eneko which celebrate the Basque Country’s traditional dishes with a modern touch. Javi was born in Spain and studied at Le Cordon Bleu, Madrid. Since then he’s worked with the best in the business, including his mentor Diego Guerrero at two Michelin star El Club Allard, Madrid, Philip Howard and Gary Foulkes at the two Michelin star The Square, London and Rainer Becker & Hamish Brown at Roka, London.

Nicolas Eliso: Restaurant Manager

Nico oversees the front of house operations at Eneko London with great care and personality. Nico studied in Lyon, France and then worked in the world of fashion in New York and Los Angeles. He returned to Europe in 2005 and has worked for three of London’s most exciting restaurants as Assistant Restaurant Manager at Nobu Berkeley Street, Senior Restaurant Manager at Hakkasan Mayfair and General Manager of May Fair Kitchen. Nico joined Eneko London in November 2016.
